Electrochemical and enzymatic evaluation of biophenols.

The redox properties of phenols can be studied using chemical, enzymatic, and electrochemical methods. Whereas chemical and enzymatic methods have a fixed oxidation potential, electrochemical methods allow for control of the oxidation potential. The redox properties of 4-hydroxyphenylacetic acid will be evaluated using cyclic voltammetry. In addition, oxidation product outcomes (HPLC) from KMnO4 oxidation, peroxidase/HRP oxidation, and bulk electrolysis will be presented. Similar data will be presented for tyrosine, N-acetyltyrosine, and acetaminophen.
