This recipe was one that I found online: [1]/ but there are a couple modifications. -AAA

Ingredients

Baker's Percentages

  • Bread Dough
100% all purpose flour (use as baseline)
74% water
0.7% yeast
1.1% salt
  • Topping
6.6% unsalted butter
45.1% granulated sugar
0.61% cinnamon


One Batch Measurements

Bread dough (made the night before, see the Let's Make Bread recipe)
2 Tablespoons butter
1/3 cup granulated sugar
1 teaspoon cinnamon

Directions

  • 1) Preheat oven for 425 degrees F.
  • 2) Lightly flour the flat surface you will be using to shape the dough.
  • 3) Take chunks of the dough and shape it into whatever shape you wish (I did pretzel shapes and made braids using three stands of dough)
  • 4) Take a cookie sheet and line it with parchment paper.
  • 5) Place the pretzels onto the cookie sheet, and bake them in the oven for about 10 minutes.
  • 6) While the pretzels are baking, mix together the sugar and cinnamon. Set that aside.
  • 7) Just before you take the pretzels out of the oven, melt the butter in the microwave.
  • 8) Using a brush, apply the butter onto the pretzels. Use all of it.
  • 9) Sprinkle the cinnamon sugar mix over the pretzel for a light dusting (using too much can create a hard crust on the finished product)
  • 10) Place them back into the oven for another 5 minutes at 425 degrees F (do not broil them)
  • 11) Remove from oven and let cool.
  • 12) Enjoy!
