1) Watch the following video from American's Test Kitchen

2) Repeat the experiment shown in the video where the starch is washed out of dough leaving behind only the gluten. Use the same basic basic recipe used in the previous activity with the following variations:

a) use all purpose flour
b) use bread flour
c) use cake flour
d) use whole wheat flour
