Brandon's Pretzel Recipe

Ingredients (values in parentheses denote baker's percentages):

  • 3 cups (100%) All-Purpose Flour
  • 1/2 cup (25.91%) Baking Soda
  • 1 teaspoon (0.70%) Yeast
  • 1 teaspoon (1.13%) Kosher Salt
  • 5-1/3 cups (295.72%) Reverse-Osmosis Water

Directions:

  • Mix 3 cups of all-purpose flour, 4/3 cups of reverse-osmosis water, 1 teaspoon years, and 1 teaspoon Kosher salt together until combined and leave overnight to raise.
  • Preheat oven to 450°.
  • Prepare a baking soda and hot water solution with 1/2 cup baking soda and 4 cups of water.
  • Place the dough on oiled or floured surface and cut into pieces.
  • Roll out the pieces and into dough ropes.
  • Form pretzel-shapes with the dough ropes.
  • Dip the pretzel-shaped dough into baking soda/water solution.
  • Sprinkle freshly dipped pretzels with sea salt and bake until golden brown.
  • This usually takes 8-12 minutes.
  • Use a toothpick or a fork to make sure the center is cooked. Enjoy!
