Ascorbate can be utilized as a radical quencher as it is in vivo. In doing so, it is able to effectively limit the size of the Acetaminophen (APAP) polymer products formed through its reaction with APAP, Horseradish peroxidase (HRP) and variable amounts of H2O2 through the equations given below.

HRP Catalyzed Reaction

2APAP + H2O2 > 2APAP. > diAPAP + H2O + 1/2 O2

2diAPAP + H2O2 > 2diAPAP. > tetraAPAP + H2O + 1/2 O2

And so on...

HRP Catalyzed Reaction with Ascorbate

2diAPAP + H2O2 + Ascorbate > 2diAPAP. + Ascorbate > 2diAPAP + Ascorbate. + H2O + 1/2 O2
